Pictures from last night’s dinner: turkey meatballs and spaghetti squash!

I made the meatballs up and dudes, I must say that I should rename them to AMAZEBALLS! They were that good.

Here’s what I did:

Take 1/2 cup of non-fat cottage cheese and blend it with a 1/2 cup rolled oats and one egg. Add cracked black pepper and whatever spices you fancy to this mixture and then combine the egg/cheese mix with a rough pound or so of either ground turkey, chicken, or the stuffing from turkey sausage links. I used Shady Brook Farms sweet italian turkey sausage (casings removed.) The final add in is the half of a small onion, diced to shit! I mean, really chop that baby up into tiny pieces.

Form into balls. I got 24 balls out of this one batch.

Cook up in a pan using no-calorie cooking spray, until browned on all sides and cooked through. I did mine in batches, about five each. It took roughly ten minutes per batch to cook.

That’s it!

I served mine with spaghetti squash, a dollop of cottage cheese and hot sauce! My sister came over and scarfed about five of the meatballs in one go. Needless to say, I’m proud of my creation.

Calorie breakdown: These come out to about 50 calories per ball. I ate three with a dollop of the cottage cheese and a cup of spaghetti squash. The whole deal was around 255 calories and INCREDIBLY filling. Nice!
