Making HUGE pancakes! :)

Making a bad day better: apple spiced oatmeal, iced coffee and art! All good things.

Chocolate Banana Pancakes!


Makes 18 servings, 32 calories per serving :)

Although keep in mind, each pancake is pretty small (around 3 inches)

Ingredients:

3/4 cup of Flour

3/4 cup of Skim/Non-fat Milk

2 Egg whites

2 Tbsp of Cocoa (I used Meijers hot cocoa mix which is 36 cals per tbsp!)

2 tbsp of baking powder

1 dash of Salt

1/2 medium Banana

Directions:

1. In a large bowl, mix the flour, egg whites, baking powder, milk, salt and cocoa until smooth

2. Slice the 1/2 a banana into small slices

3. Heat the griddle or frying pan on low heat. (If you decide to use oil, add those calories, I use cooking spray!)

4. Pour or scoop the batter onto the griddle or pan, use approximately a tablespoon of batter for each pancake. 

5. Add banana slices onto the pancakes as they cook.

6. Brown on both sides and serve hot.

Breakfast: scrambled egg whites with peppers and Ezekiel toast with cherry jam. It’s yummy!

Breakfast! Tomato focaccia, over easy egg and a roasted red pepper to top. Made from scratch and roughly 215 calories. BOOYAH! Delicious.

I think I’m just gonna eat an avocado tomorrow with salsa for lunch.

You see, my “lunch” is actually more like breakfast time since it’s always scheduled at 11 AM. I get up at 5 AM for work and who the hell ever wants to eat that early? My lunch, ergo becomes a breakfast of sorts. Avocado for breakfast sounds yummy!

This morning, I came across the ULTIMATE pancake recipe. I tweaked it slightly to my liking and came up with something so simple and so damn filling and good, I’m practically crying with joy as I write this.

Greek Pancake Ingredients:

3/4 C of 0% Greek yogurt
1/2 C of whole wheat flour
1 tsp of baking soda
1 egg white
1 tsp of vanilla
2 T of water

Method:

Mix wet ingredients together first then add your dry. The batter will be extremely thick as you can see above. Heat up a skillet, spray with no-stick cooking spray, then cook up your pancakes as you like. This recipe will make up 4 nicely sized pancakes, 2 per serving.

Nutrition:

Calories - 173, Fat - 0.5, Potassium - 27mg, Carbs - 26.6g, Fiber - 4g, Sugars 3.6g, Protien 13.6 

I topped my pancakes off with my spiced apple syrup. I love mixing fruit into syrups because it extends the syrup and allows me to drizzle more onto my waffles or pancakes without feeling guilty about all the added calories.

Spiced Apple Syrup Ingredients:

2 T of Lite maple syrup (I used Butter Lite syrup - not “clean” but it was all I had)
1/4 C of unsweetened applesauce
cinnamon to taste
a dash of ground clove (optional)

Method:

Heat together however way you like (on the stove or in the microwave) and pour over the pancakes. It makes enough for two servings but it’s so low calorie you could use the whole batch for yourself. :-)

Nutrition: Calories - 41, Fat - 0, Sugars - 9g, Fiber 1.4g, Carbs - 11.2g, Potassium - 5.8mg, Sodium - 54mg
